Go-To Salad
Protein: shredded rotisserie, garbanzo beans, canned tuna or salmon
Slice: cherry tomatoes, green onions
Other toppings: feta cheese, dressing, croutons

Green Chile Rice and Beans - 6 Servings
Directions: Simmer rice and onion in stock for 20 mins, Mix all other ingredients into rice mixture

2 Cups Rice
4.5 cups chicken/veggie stock
2 Cans Black Beans
1 White Onion (optional), chopped
2 cups Green Chile Sauce
Black Pepper to taste
1 bunch Cilantro, minced
Monterey Jack, shredded on top
